Grown in the highlands of Chirinos, a renowned subregion within Cajamarca, Peru, this coffee comes from Finca Churupampa, a progressive, family-run farm led by Eber Tocto and his brothers. Nestled between 1,300 and 2,000 meters above sea level, the farm benefits from the region’s rich volcanic soil, cool mountain air, and biodiversity. These conditions — along with a strong local tradition of shade-grown coffee — make Chirinos one of the most exciting coffee-producing areas in Peru.

The Tocto brothers have redefined what coffee farming looks like in their region. More than just growing coffee, they have created a community-driven model of sustainability, supporting 188 neighboring farmers through access to processing facilities, training, and export services. Their focus on education, environmental stewardship, and economic empowerment has helped raise both the quality of the coffee and the livelihoods of those who grow it.

Mario Jesus is one of the leading producers and collaborator of Finca Churupampa and the Tocto brothers. His farms are farms are situated at the perfect altitude and microclimate, growing varieties such as Bourbon and Caturra.in the Pariamarca area of the Cajamarca region. He has been dedicated to coffee cultivation for over 30 years, since the introduction of coffee farming in the region. He is a notable member of his community, recognized for his expertise in the coffee industry and for producing high-quality microlots for more than a decade. He is one of the most active members of Finca Churupampa and is committed to constantly improve the quality of his coffee. 

After harvesting, the coffee is fully washed, a process that involves pulping the fresh cherry, fermenting the mucilage, and washing the beans clean before drying them in the sun — often on raised beds or drying sheds, allowing for slow, even drying that preserves delicate flavors.

When brewed as a filter coffee, Churupampa offers a balanced and nuanced cup. The first sip greets you with the soft sweetness of almond, followed by the rich, jammy depth of fig, and finishes with a bright cherry acidity that gives the cup clarity and structure. The body is silky, the sweetness layered, and the aftertaste lingers with refined elegance — a true reflection of the coffee growing area's unique soil conditions, microclimate, and the Mario Jesus's dedication.
