Finca San Francisco is located near La Majada, nestled in the volcanic highlands of Apaneca-Ilamatepec in western El Salvador. With its rich soils, full shade cover, and altitude of 1,500 metres, this region is ideal for growing expressive and high-quality coffees.
This particular lot—named Vega—comes from producer Andrés Salaverría, the fifth generation of a coffee-growing family with over a century of history. After completing a Master's in Coffee Science and Economics in Italy, Andrés returned home to help shape the future of his family’s farms, combining tradition with innovation.
The coffee is made using an anaerobic natural process, with cherries carefully hand-picked at peak ripeness before undergoing slow fermentation and drying. This approach—developed through years of research and experimentation—brings out a bold and exotic flavour profile with notes of kiwi, roasted cane sugar, yellow peach, pineapple, and dark chocolate.
Beyond coffee, the San Francisco farm is also home to a protected natural forest reserve and plays an active role in supporting local communities with education and healthcare initiatives. Andrés’ vision is rooted in sustainability, traceability, and a deep connection to place—ensuring each lot is not just distinctive in flavour, but meaningful in origin.
