Grown in the highlands of Nensebo, in Ethiopia’s West Arsi zone, Mundayo coffee comes from smallholder farms situated around 1,950 meters above sea level. Named after the nearby town of Mundayo, this lot is made possible by around 750 local farmers who deliver their cherries to the AASH washing station. These farmers cultivate small plots of 1 to 1.5 hectares using traditional, organic-by-default methods, often intercropping coffee with food crops to support their families and the land. The coffee trees are a mix of JARC varieties and local landraces, well-suited to the region’s ideal growing conditions. Once ripe, cherries are handpicked, carefully sorted at the station, and fully washed — a meticulous process involving fermentation for 36 to 48 hours, followed by thorough washing and drying on raised beds for 7 to 11 days. The result is a Grade 1, fully washed Ethiopian coffee roasted for filter brewing, offering a clean and elegant cup. Expect a bright, floral aroma, layered with juicy stone fruit and vibrant citrus — a beautifully balanced expression of the classic Ethiopian profile.
