Grown in the lush highlands of Pariamarca, a small subregion nestled in Cajamarca, Peru, this coffee reflects the exceptional terroir of one of the country’s most promising specialty coffee regions. At an altitude of 2,000 meters above sea level, Mario Jesús Rufasto cultivates his coffee amidst rich soils and a unique microclimate—ideal conditions for slow cherry maturation and complex flavor development. As one of the most respected producers in the region and a key member of Finca Churupampa, Mario has over 30 years of experience in coffee farming, contributing significantly to the area's growing reputation for high-quality microlots.

On his farm, Mario focuses on traditional Arabica varietals like Caturra and Bourbon, grown with a deep commitment to sustainability and quality. The coffee undergoes a fully washed process, carefully managed on-site by Mario and his family, who are well-versed in post-harvest techniques including extended and double fermentation. These methods, refined over years with technical support from Eber Tocto and the Churupampa team, are designed to enhance clarity, sweetness, and complexity in the final cup.

When brewed as a filter coffee, Churupampa offers a balanced and nuanced cup. The first sip greets you with the soft sweetness of almond, followed by the rich, jammy depth of fig, and finishes with a bright cherry acidity that gives the cup clarity and structure. The body is silky, the sweetness layered, and the aftertaste lingers with refined elegance — a true reflection of its origin, process, and the care taken at every step.
