Finca El Jaguar - Specialty Coffee from the Heart of Nicaragua

Nestled in the lush Isabelia mountain range of Jinotega, Nicaragua, Finca El Jaguar produces coffee that reflects its vibrant natural environment. Each cup offers a smooth, velvety body with rich chocolate undertones, complemented by tropical fruit notes and delicate floral aromas. These intricate flavors are a testament to the farm’s unique terroir, where rich volcanic soil and a cool mountain climate create ideal conditions for cultivating exceptional coffee.

This family-operated farm spans 50 hectares of Rainforest Alliance-certified agroforestry at an elevation of 1,300 to 1,400 meters above sea level, with an additional 110 hectares dedicated to conserving pristine cloud forest. Founded in the early 1990s by conservationists and coffee enthusiasts Liliana Chavarría and Georges Duriaux, Finca El Jaguar is more than just a coffee farm—it’s a thriving ecosystem. The farm is home to 383 bird species, representing half of Nicaragua's avian biodiversity, and actively supports environmental education and reforestation projects in local communities.

Finca El Jaguar’s sustainable practices are deeply embedded in its operations. The farm uses a nursery system with advanced grafting techniques to improve plant resilience and productivity, along with organic compost made from post-harvest pulp to replace chemical fertilizers. The shade trees that dot the farm provide natural pest control, regulate the microclimate, and enhance pollination.

Every coffee cherry is handpicked at peak ripeness, floated to remove imperfections, and carefully fermented in barrels for 85 to 120 hours. This meticulous process unlocks the coffee’s full flavor potential. The cherries are then dried at Beneficio Seco Don Esteban over 25 to 30 days, ensuring consistency and quality.

While Nicaragua may not yet rival its Central American neighbors in coffee fame, it is quickly gaining recognition for its specialty coffee. Producers like Finca El Jaguar are leading the charge, combining a deep commitment to sustainability with innovative farming and processing techniques. Each sip of Finca El Jaguar coffee offers not only extraordinary flavor but also a connection to the farm’s dedication to environmental stewardship and community support.
