Our latest coffee offering boasts distinct notes of blackberry juice and sweet honey, making it an exceptional choice for both filter and espresso enthusiasts. This exquisite coffee is sourced through our esteemed partners at Sucafina, who import from the renowned farmer Marvin Barrantes. Marvin named his farm in honor of his mother, Elisa Alfaro Hidalgo, reflecting the deep personal commitment and tradition behind his coffee.

Chosen for its superior taste and quality, this coffee also highlights the resilience and innovation of Costa Rican farmers in adapting to climate change. The honey processing method used is particularly noteworthy. In this process, the coffee cherries are pulped to remove the outer skin, but the mucilage layer is left intact and dried under the sun. As the sugars on the surface of the beans crystallize, they turn a distinctive yellow, giving the process its 'honey' name.

Marvin started his milling operations in 2012 with just a small pulper and a few raised beds. Despite the high costs associated with honey processing, Marvin's farm's proximity to his mill and his meticulous approach to capturing value at every stage make it possible to produce truly exceptional coffee.

The coffee cherries are selectively handpicked by Marvin and his family. They are then pulped using Marvin’s eco-pulpers, and the parchment and mucilage are spread out on drying beds, where they are frequently raked to ensure even drying. This meticulous drying process takes approximately 20 days under the sun.

Once the drying process is complete, Marvin transports the parchment coffee to Hacienda Sonora. There, it is stored, dry milled, and prepared for export, ensuring that every step from farm to cup is handled with the utmost care and expertise.
