Finca Fatima, a family-owned coffee farm in Coatepec, Mexico, run by Ernesto Perez and his sister, Givette Perez Orea, has expanded its operations in 2023 by acquiring Finca La Perla. The farm is situated at 1,250 meters above sea level, making it vulnerable to Coffee Leaf Rust (CLR) and other pests. To combat this, the owners have planted CLR-resistant varieties like Garnica and Marsellesa, ensuring high-quality coffee production.
At Finca Fatima, ripe red cherries are carefully handpicked and processed, with underripe cherries removed during the cherry floating process. The coffee is dried in small Guardiola dryers at low temperatures. Marsellesa, a variety grown at the farm, is part of the Sarchimor family, which is a hybrid of Villa Sarchi (a Bourbon mutation) and a CLR-resistant hybrid from Timor-Leste. This unique variety offers a blend of Bourbon flavor and disease resistance, with taste notes of red fruits, honey, and clementine, making it a prized component of the farm's coffee production.
