This microlot coffee, grown by Jairo Arcila at the Buenos Aires farm in Quindio, Colombia, is a 100% Castillo varietal. Developed by Federación Nacional de Cafeteros, Castillo is known for its high productivity and resistance to coffee leaf rust. This specialty coffee scores 87 and offers cupping notes of cinnamon, Marzipan and Raspberry.
Jairo Arcila, a third-generation coffee grower, has extensive experience from his 40-year tenure as a Mill Manager for Colombia’s second-largest exporter. His first farm, Finca La Esmeralda, was acquired in 1987. Over the years, he expanded his holdings to include Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires, providing local employment during harvest seasons. The Castillo coffee is cultivated at altitudes of 1200-1700 meters, benefiting from the region's volcanic ash soil, temperatures ranging from 14-30°C, and annual rainfall of 1700-2200 mm.
The cherries are meticulously hand-picked and hand-sorted, followed by sun-drying on raised beds under temperature-controlled conditions to achieve ideal moisture content. The unique decaffeination process uses sugarcane, EA. Enhancing sweetness while preserving the coffee's natural attributes.
